Seafood Chowder

Serves 4

  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 5 rashers streaky bacon, chopped
  • 1 tablespoon plain flour
  • 600ml of fish stock
  • 225gm potatoes cut into large chunks
  • Pinch of cayenne pepper
  • 300ml milk
  • 350gm chowder mix
  • 4 tablespoons of single cream
  • Handful of chopped parsley

Method

Heat the olive oil in a large saucepan over a medium heat then add the onion and bacon. Cook until the onion is soft and the bacon is browned then stir in the flour and cook for another two minutes.

Pour in the fish stock and bring the mixture up to a simmer. Add the potatoes, cover the pan and simmer for another 12-15 minutes until the potatoes are cooked.

Add the cayenne pepper, seasoning and milk then add the chowder mix and simmer for another 4 minutes.

Add the cream and sprinkle with the parsley then serve.

Tomato and Thyme Cod

Serves 4

  • 4 cod portions
  • 1 tablespoon olive oil
  • 1 onion chopped
  • 400gm can of chopped tomatoes
  • Handful of thyme sprigs – leaves only
  • 1 heaped teaspoon of light, soft brown sugar
  • 1 tablespoon soy sauce

 

 

Method

Heat the oil in a frying pan then add the onion and fry for 5-8 mins until lightly browned. Stir in the tomatoes, thyme, sugar and soy sauce then bring to the boil.

Simmer for 5 mins, then slip the cod into the sauce. Cover and gently cook for 8-10 mins until the cod flakes easily. Serve with baked or steamed potatoes.

 

Smoked Haddock

Simply add a splash of milk, a little salt and pepper and cook in the microwave for 3 minutes.
