Mackerel – 2 butterflied fish

Freshly ground salt and pepper

2 cloves garlic

Juice of 1 lemon

2 tbsp olive oil



Place the mackerel in a large shallow dish.

Whisk together the lemon juice, olive oil and crushed garlic with a pinch of salt and pepper.  Pour the mixture over the fish and turn the mackerel fillets to coat.  Cover the dish and leave to marinate for 15-20 mins.

Place on the bbq and cook for 2-3 mins on each side – skin side down first. Take care when turning to ensure that the skin doesn’t stick to the BBQ.

Serve with sprinkled chopped parsley and with wedges of lemon to squeeze over.
