Sea Bass is considered by many leading chefs as the king of fish. It makes excellent eating, with its milky white flesh and subtle flavour. It is delicious grilled simply or steamed. Be sure not to overcook it – when you press the skin, you should just be able to feel the moist flakes of fish sliding apart.
